I can't believe it's been more than a year since I've posted a cooking post! I've become a huge fan of cooking my own meals over the last year and try out at least one new Pinterest recipe every month. I'm still not a pro at cooking, but I've definitely improved and found some holy grail, healthy but delicious recipes over the past year. I'm still struggling with my binge eating disorder, but making healthy dinner at home that I can also pack for lunch has really helped me at least maintain my weight over the past year in between my binge eating stretches. Not to mention I find cooking to be really fun and stress-relieving! Trying out new Pinterest recipes and finding new ways to make eating vegetables and protein delicious is really satisfying, both for your mind and your body. Here are some of my favorite go-to healthy recipes for quick, easy weeknight dinners. All of them are high in protein and are easy to incorporate vegetables into.
Simple Coconut Chicken Curry -- I make this recipe at least every other month
Oven Chicken Fajitas -- Low on sodium, but carries a ton of flavor
Turkey & Spinach Lasagna -- Healthier version of meaty lasagna
Baked Chicken Parmesan -- Mess proof, low-fat way to cook chicken parmesan
Vegetable Baked Ziti -- Easiest weeknight dinner with lots of versatility
Cheesy Chicken & Spinach Pasta Bake -- Ooey gooey and cheesy, but not high in saturated fat
